Apple fried rice is my favorite of all fried rice varieties and its ideal for lunch box. It has mild sweetness with nice aroma of cardamom. This can be served as such without side dish. The variety rice can be given to babies from 6 months after introducing apples and salt can be skipped. The taste and aroma of the rice varies with the variety of apples used. Kids will definitely like this apple fried rice which tastes similar to kashmiri pulao.
- Apple – 1
- Rice – 1 cup
- Onion – 1
- Cumin seeds – 1/2 tsp
- Pepper powder – 1/2 tsp
- Cardamom powder – 1 tsp
- Cashews – 5
- Dry fruits powder – 2 tsp (optional)
- Butter – 1 tsp
- Salt to taste
1.Wash and chop apple into small cubes. Cook rice with water and keep aside.
2.Melt butter in a pan, add cumin seeds and chopped cashews. Fry till golden brown.
3.Add onion and saute until it turns translucent. Add apple into it and saute for a minute.
4.When apple turns partially soft and begins to release nice aroma, add cooked rice, cardamom and pepper powders.
5.Mix well and fry for 2 to 3 minutes. Add dry fruits powder and stir.
6.Serve hot and enjoy the flavor.
- For babies below 8 months, puree rice in a blender after cooking and add formula milk or mother milk for adjusting consistency. The ingredients can be adjusted accordingly.
- Shredded coconut, bell peppers can be added to make it rich.
