BARLEY SWEET POTATO KHEER

Barley is a nutritious grain for babies. It is good source of vitamin A, Folate and protein. This recipe can be given to babies from 6 months after introducing barley and sweet potato separately. Barley can be offered to babies by soft cooking it. I have made this kheer by preparing barley powder from pearled barley.

INGREDIENTS:

  • Barley – 1/2 cup
  • Sweet Potato – 1
  • Water – 1 cup
  • Cardamom powder – pinch
  • Saffron strands- pinch

PREPARATION:

  1. Wash barley with water and sun dry it without moisture.
  2. Dry roast barley in a pan till it slightly changes colour.Let it cool and transfer to a blender. Grind it finely into a powder.
  3. Store into airtight container when it comes to room temperature. This can be used for making barley porridge.

METHOD:

1.Wash and cook sweet potato adding water. Remove skin and mash it well.

2.Take two teaspoon of barley powder in a bowl and add water. Keep it in low flame and stir without forming lumps.

3.When it starts to bubble, add sweet potato and whisk continuously.

4.Add cardamom powder and saffron to it and cook until it becomes thick.

5.Serve to babies when it becomes warm.
