INGREDIENTS:

  • Beetroot – 2 medium size
  • Wheat flour – 1 cup
  • Baking powder – 1/2 tsp
  • Sugar – 4 tbsp
  • Oil – 1 tbsp
  • Milk – 1 cup
  • Egg – 1
  • Ghee / oil – as required

METHOD:

1. Wash the beetroot, peel the skin and cut into pieces. Take it in a pan along with water and boil until cooked soft.

2. Once done, allow it to cool. Add the cooked beetroot to mixer and pulse into smooth puree.

3. Now to the beetroot puree, add wheat flour, baking powder, egg, milk, oil and sugar to it. Blend everything into thick smooth batter.

4. Pour batter into mixing bowl and keep aside for 10 minutes. Adjust the consistency adding little water if required.

5. Heat a pan or griddle drizzling oil, pour a ladle full of batter and do not spread. Cook in medium flame until it forms bubbles on top.

6. Carefully flip to the other side and cook for few seconds. Remove from pan and repeat for remaining batter.

7. Arrange pancakes in serving plate, dust some powdered sugar and garnish with fresh fruits.
