Brinjal is a low calorie vegetable that has good nutritional values and this curry is a quick recipe. I love having it in dry form but I prepared it semi dry this time with quick tomato rasam. This pairs well with rice or dosa.
- Brinjal – 6
- Onion – 1
- Tomato – 1
- Turmeric powder – 1 /3 tsp
- Chilli powder – 1 /2 tsp
- Coriander powder – 1 tsp
- Peanut powder – 2 tsp
- Salt – as required
- Mustard seeds – 1 /3 tsp
- Oil – 1 tsp
1.Wash and chop brinjal into small pieces and keep soaked in water.
2.Chop onion and tomato. Heat oil in pan, add mustard seeds and after they pop up add onion and saute.
3.When they turn translucent add tomato and saute well till it becomes mushy.
4.Add turmeric, chilli and Coriander powder and saute for a minute. Add brinjal and mix well.
5.Then add little water and required salt. Mix well and cook covered until brinjal gets well cooked.
6.Now add peanut powder, mix well and cook until it becomes thick.
7.Serve hot with rice.
