This stir fry is easy to make with eggs and goes well with rice, chapathi, bread. This can be had as side dish for breakfast, lunch or as snack in evening. I have prepared it today with Bisibelabath (sambar sadam). Capsicum added to eggs gives a spicy taste. This is really a very quick recipe to do within minutes.
- Eggs – 4
- Capsicum – 1
- Onion – 1
- Mustard seeds – 1 /4 tsp
- Oil – 1 tsp
- Tumeric powder – 1 /2 tsp
- Garam masala powder – 1 /2 tsp
- Chilli powder – 1 /2 tsp
- Coriander powder – 1 tsp
- Salt – as required
1.Wash capsicum remove seeds and chop finely. Fine chop onion.
2.Heat oil in a kadai and add mustard seeds when they splutter add onion.
3.When they turn golden brown add capsicum along with turmeric, coriander, garam masala and chilli powders.
4.Add salt and fry for a minute. Break eggs and add to it and keep the flame on medium heat.
5.Gently stir for two minutes until the eggs are cooked.
6.Serve hot with rice or chapathi.
- Switch off the flame immediately when eggs become soft as it will become dry and rubbery when left for long time.
- Pepper powder can be added for nice flavour and any veggies like carrots, cabbage can be added.
