CARROT CHUTNEY

Carrot chutney is my favourite of all chutneys due to its mixed taste. It is little spicy and also sweet. This is one of the best ways to make kids eat carrots. This chutney pairs well with rice, dosa or idly.

INGREDIENTS:

  • Carrots – 4
  • Onion – 1
  • Red chilli – 6
  • Channa dal – 2 tsp
  • Moong dal – 1 tsp
  • Ginger powder – 1 tsp
  • Coriander powder – 1 tsp
  • Turmeric powder – 1 /3 tsp
  • Salt – as required
  • Mustard seeds – 1 /2 tsp
  • Curry leaves – 4
  • Oil – 1 tsp

METHOD:

1.Wash and chop carrots into pieces. Chop onion and saute it in oil until it becomes translucent.

2.Add Channa dal, moong dal and red chilli to it and saute well until the dal changes colour.

3.Now add carrots and sprinkle little water. Add Turmeric and Coriander powder to it and cook for few minutes until the carrots turn soft.

4.Transfer it to a mixer and grind into paste adding little water.

5.Heat oil in kadai, add mustard seeds and curry leaves, when they splutter add the grinded paste and stir well for a minute.

6.Serve hot with idly or dosa.
