Carrot payasam is very simple and easy to make within minutes and the only effort required is grating the carrots. I always enjoy this having it warm though tastes good when served hot or cold. - Carrots grated – 3
- Milk – 2 cups
- Cardamom powder – 1 tsp
- Sugar – 1 cup
- Cashews – 2 tsp
- Raisins – 2 tsp
- Ghee – 2 tsp
1.Heat ghee in a pan, add grated carrots and saute well until the raw smell goes.
2.Boil milk and add it to carrots. Stir well and cook in low flame until the carrot become soft.
3.Fry cashews and raisins in ghee. Add it to carrot along with sugar and cardamom powder.
4.Stir well until the sugar dissolves and remove from heat.
5.Serve it hot or cold.
- Coconut milk can be added for enhanced taste.
- I have added one tsp of dry fruits powder for crunchiness.
- If you want it to be in smooth consistency then blend carrots in mixer.
