CARROT RICE

The carrot rice is one of the quick variety rice that can be made within minutes. I always remember my school days when I see carrot rice as often take it as lunch for school. It is ideal lunch box recipe for kids. My mom makes it with cashews and nuts. Today I have prepared with pepper powder as my people at home caught cold. Pepper powder can be replaced with green chilli or chilli powder. Do try this healthy colourful rice for your kids.

INGREDIENTS :

  • Carrot – 4 medium size
  • Rice  – 1  cup
  • Onion – 2
  • Mustard seeds – 1 /4 tsp
  • Urad dal – 1 /4 tsp
  • Chana dal – 1 /4 tsp
  • Oil – 1 tsp
  • Turmeric powder – 1 /4 tsp
  • Garam masala powder – 1 /2 tsp
  • Pepper powder – 1 tsp
  • Coriander powder – 1 tsp
  • Salt – as required

METHOD :

1.Cook rice with required water in pressure cooker. Spread it to separate grains.

2.Leftover rice can also be used. Wash and grate carrots and chop onion.

3.Heat oil in a kadai, add mustard seeds, Urad and Chana dal.

4.When they pop up add Onions and saute until it becomes translucent.

5.Add carrots and saute until it shrinks and raw smell goes.

6.Then add required salt along with turmeric, garam masala, coriander and pepper powders.

7.Saute well until everything blends together.

8.Add cooked rice and mix well for 2-3 minutes in low flame.

9.Serve hot with chips or papad.

NOTE :

  • Ghee or butter can be used when making for kids.
  • No salt for baby below one year.
  • Fried cashews and nuts can be added to make it rich.
