CHINA GRASS PUDDING | AGAR AGAR PUDDING

China grass (agar agar) is a natural vegetable gelatin extracted from sea weed. It is white and semi translucent sold in the form of strips or powder. It is used in making jellies, puddings and custards. I have tasted it once when I went to my friend’s house for a party and she told me it is Kadal paasi (in tamil). I was not aware of it before and thought of trying it when I noticed the pack in supermarket. I made it in three flavours adding rose milk, chocolate powder and vanilla essence. Do try this at home and you will enjoy it. This is good for health and serves as a best coolant for body in summer.

INGREDIENTS:

  • China grass – 5 gms
  • Milk – 1 /2 litre
  • Sugar – 1 /2 cup
  • Water – 1 cup
  • Cardamom – 2
  • Vanilla essence – few drops (for white pudding)
  • Chocolate powder – 1 tsp (for brown pudding)
  • Rose milk essence – few drops (for pink pudding)

METHOD:

1.Break agar agar strands into pieces in a vessel.

2.Add water, mix well and keep soaked for few minutes.

3.Boil milk adding sugar and Cardamom. When it comes to boil, remove from flame and keep aside.


4.Now heat china grass in low flame until it gets melted.

5.Pour this china grass mix into the milk and whisk well.

6.Divide the milk into three portions and pour into different bowls.

7.Add rose essence in one, vanilla essence in another and mix well.

8.Mix chocolate powder with little water and add to the third portion of milk.

9.Refrigerate the bowls for one hour and the pudding will be set.

10.Invert and serve immediately. Enjoy the flavoured pudding.

NOTE :

  • Condensed milk can be added for rich taste.
  • I have used bakers China grass and bakers drinking chocolate powder.
