CORIANDER RICE

Coriander rice is perfect lunch recipe that I tried today for our lunch with potato fry. I have a small garden at home and had lot of coriander leaves so thought of trying this rice and came out really good and everyone at home liked it so much. Only once I had coriander rice previously when my neighbour in Gujarat gave me preparing without onion and garlic. This time I have prepared it in my style adding tomato and onion. Also prepared the coriander rice for my baby with coconut milk in baby version.

INGREDIENTS:

  • Coriander leaves – 1 cup
  • Rice – 1 cup
  • Onion – 1
  • Tomato – 1
  • Green chilli – 2
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Cashews – 10
  • Oil – 1 tsp
  • Salt – as required

METHOD:

1.Soak rice in water for about 20 minutes and cut the coriander leaves and wash well.

2.Grind coriander leaves with green chilli into smooth paste adding little water.

3.Heat oil in a pressure cooker,  add mustard and cumin seeds.

4.When they splutter add cashews and chopped onion fry till golden brown.

5.Add chopped tomato and saute till they become musky.  Add grinded paste and fry for a minute.

6.Add soaked rice along with required water and salt.

7.Stir well and pressure cook for 4 whistles. When the pressure releases, open and fluff the rice.

8.Serve hot with potato fry or any raita of your choice.

NOTE:

  • The rice can be cooked in Coconut milk to give rich flavour.
  • Ginger garlic paste can be added while grinding coriander leaves.
