The easiest scrambled egg recipe and my favourite side dish for rice especially rasam rice. Egg contains all the daily vitamins and minerals but it is lost when overcooked. So, Keep watch to switch off flame when it gets soft. There are many ways to do egg bhurji but I always like to keep it simple.



  • Eggs-5
  • Onions-2
  • Mustard – 1/2 sp
  • Curry leaves-3
  • Salt- as required
  • Tumeric powder – 1/4 sp
  • ┬áCoriander powder-1/4 sp
  • Garam masala – 1/2 sp
  • Chilli powder – 1/2 sp
  • Oil – 1 sp


1.Add oil in a pan, add Mustard seeds and when it splutter add curry leaves and finely chopped onions.

2.When onions becomes translucent, add the masala powders and fry till raw smell goes.

3.Break eggs and pour into this and add salt.

4.Stir continously until the eggs are completely cooked and soft.

5.Take care not to burn at bottom.


  • Green chilli can be added instead of chilli powder.
  • Ginger garlic paste can be added.
