EGGLESS CHRISTMAS PUDDING RECIPE | PLUM PUDDING RECIPE

Christmas pudding is a traditional pudding recipe without which no Christmas meal ends. This rich pudding is served at the end of British Christmas meal. Christmas pudding is also called as plum pudding and prepared adding lots of nuts and dry fruits. The dry fruits and nuts are soaked in advance in rum. The pudding is delicious and easy to prepare by steaming and does not require oven.

I have already prepared alcoholic Christmas fruit cake last year for the Christmas, so thought of trying non-alcoholic Christmas recipe this year as per my readers request. Also the traditional pudding is prepared adding eggs, I have tried eggless version substituting mashed banana.

INGREDIENTS:

  • Wheat flour – 1/2 cup
  • Baking powder – 1/2 tsp
  • Breadcrumbs – 1/2 cup
  • Sugar – 1/3 cup
  • Cinnamon powder – 1/2 tsp
  • Apple – 1
  • Banana – 1
  • Cold Butter – 75 gms
  • Apple juice – 4 tbsp

FOR SOAKING:

  • Apple juice – 1/2 cup
  • Mixed dry fruits – 2 cups (prunes, raisins, dried black grapes, dates, tutti fruity, glazed cherries)
  • Nuts – 1/4 cup
  • Honey – 3 tbsp

PREPARATION:

  • Chop dry fruits and nuts if needed and take it in a glass bowl. Pour apple juice and honey to it. Mix well with a spoon and place it in refrigerator.
  • Let it be soaked for a week or 3-4 days. Stir with the spoon often and refrigerate again. I have soaked it for a week.
  • Grease a steel or oven safe glass bowl with butter and keep aside.
  • I didn’t have breadcrumbs, so powdered rusks and used. Also added banana as substitute for an egg.

METHOD:

1. Take wheat flour, breadcrumbs, sugar, baking powder and cinnamon powder in a mixing bowl. Mix well.

2. Add grated apple and mashed banana and mix well. Grate cold butter to it and mix together. Add little apple juice to adjust the consistency.

3. Now add the soaked dry fruits and nuts and fold gently. Transfer into greased bowl and level the surface. Cover with parchment paper and silver foil on top. Seal with a rubber band.

4. Place the bowl in idli cooker or steamer and steam cook for 1 and 45 minutes. Once done, check inserting toothpick at centre. Mine took 2 hours.

5. Allow it to cool, invert to a plate. Dust some powdered sugar on top.

6. Slice, serve and enjoy.
