We got a few alphonso mangoes last week and I wanted to try mango recipes. I planned to do mango payasam but couldn’t do it as I had only one big size mango left. Thought of doing a simple cake and got this recipe from jeyashriskitchen. I have made in wheat flour instead of maida. The cake turned out to be soft and mangolicious.
- Wheat flour – 1 and 1 /2 cup
- Mango puree – 1 cup
- Sugar – 2/3 cup
- Baking powder – 2 tsp
- Baking soda – 1 /2 tsp
- Salt – 1/2 tsp
- Cardamom powder – 1 tsp
- Oil – 1 /3 cup
- Vanilla essence – 1 tsp
1. Preheat oven to 180° C and grease 8″ round tin with oil and dust flour.
2.Scoop flesh from mango and blend into thick puree.
3.Combine oil, sugar, vanilla essence, mango puree together and mix until sugar dissolves.
4.In a mixing bowl, take wheat flour, baking powder, baking soda and cardamom powder. Mix everything together.
5.Transfer the wet ingredients to the flour and gently mix together.
6.Pour the batter into greased tin and bake for 30-35 minutes in convection mode. Mine got done at 30 minutes so keep an eye after 25 minutes.
7.Cool it on wire rack and slice into pieces.
8.Serve with chocolate sauce and enjoy.
