INGREDIENTS:

  • Brown rice – 1 cup
  • Mushrooms – 250 gms
  • Fenugreek leaves – 1 cup / kasuri methi – 1/4 cup)
  • Onion – 1
  • Ginger garlic paste – 1 tsp
  • Green chilli – 2
  • Cumin seeds – 1 tsp
  • Bay leaf – 1
  • Cinnamon – 1/2 inch
  • Cloves – 2
  • Salt – as required
  • Oil – 2 tsp

METHOD:

1. Wash and soak rice in water for 30 minutes. Wash and chop mushrooms and roughly chop fenugreek leaves. I have used dried kasuri methi.

2. Heat a pressure cooker adding oil. Once hot, add Cinnamon, Cloves, bay leaf and Cumin seeds.

3. Once it splutters, add slitted green chilli and ginger garlic paste to it. Saute for few seconds until raw smell goes.

4. Add chopped onion and saute until translucent. Now add fenugreek leaves / kasuri methi and mushrooms. Saute for 2-3 minutes.

5. Drain and add soaked rice to it and saute for a minute. Add 2 and 1/2 cups of water along with required salt. Stir well and bring it to boil.

6. Once it starts boiling, close the cooker with lid and pressure cook for 2 whistles.

7. Switch off and allow the pressure to seize. Open the lid and gently fluff the rice with fork.

8. The healthy methi mushroom brown rice pulao is ready. Serve hot with simple corn potato raita.
