INGREDIENTS:

  • Broccoli florets – 1 cup
  • Mushroom chopped – 1 cup
  • Coconut oil – 1 tsp
  • Cumin seeds – 1 tsp
  • Pepper seeds – 1 tsp
  • Salt – as required
  • Fresh cream – 2 tbsp
  • Coriander leaves – for garnishing

METHOD:

1. Wash the broccoli and mushrooms. Cut broccoli into florets and slice mushroom into pieces.

2. Heat a pressure cooker adding oil. Once hot, add coarsely crushed cumin and pepper seeds. Saute for a minute.

3. Now add broccoli and saute for a minute. Add mushrooms and saute until it starts leaving water.

4. Pour 2 cups of water and add required salt. Stir well and pressure cook for 2 whistles.

5. Once the pressure releases, open cooker and allow it to cool a bit. Now using hand blender, mash and blend everything until smooth.

6. Strain the mixture with sieve, reserving 1/2 cup of mixture. Now pour the reserved mixture into the strained soup and mix.

7. Pour into soup bowl and add a tbsp of fresh cream on top. Garnish with Coriander leaves and crushed pepper.
