I am a big fan of dosa and try different variations at home and this time tried with mushroom and turned out to be delicious. I have used mushroom thoran (mushroom kerala style poriyal) as a stuffing for dosa. Simple mushroom masala with onion and tomato can also be used for stuffing. This crispy yummy dosa serves best as breakfast or dinner.
- Mushroom – 1 /2 cup sliced
- Onion – 1 chopped
- Tomato – 1 chopped
- Mustard seeds – 1 /4 tsp
- Garlic – 5 cloves
- Chilli powder – 1 /2 tsp
- Turmeric powder – 1 /4 tsp
- Garam masala powder – 1 /2 tsp
- Oil – 1 tsp
- Salt – as required
- Dosa batter – as required
1.Heat oil in a kadai and add mustard seeds. When they splutter add onion and saute.
2.When it changes colour, add tomato, ginger garlic paste and saute until it becomes mushy.
3.Add mushrooms and fry until it gets cooked.
4.Then add salt and all dry powders and mix well. Cook for a minute until raw smell goes off.
5.Now take dosa batter and spread evenly from centre of dosa tawa.
6.Drizzle some oil and when dosa is half cooked, place the mushroom masala in center of dosa.
7.Close the dosa tava with lid. Let this cook for a min until the bottom turns crispy.
8.Fold over and serve hot with any chutney.
