Ada pradhaman is the recipe that I wanted to try for a long time. Yes really a very long time of three years. Though it is very simple recipe to do within minutes, I took this much time to do for no reasons. I have tasted this ada pradhaman only once when I was working in college as professor. One of my students gave me this payasam for Onam festival and I loved it very much. After that I tried it only now for this weeekend and my husband completed and asked for more. I think this is the first time he asked for more sweet as he don’t eat much sweets. I have prepared in pressure cooker which doesn’t require much stirring.
- Rice ada – 1 cup
- Milk – 3 cups
- Water – 1/2 cup
- Sugar – 1/2 cup
- Cashews – 7
- Raisins – 10
- Cardamom powder – 1 tsp
- Ghee – 1 tsp
1.Combine milk, water, washed rice ada in a pressure cooker. Stir well and bring it boil. Once it starts boiling add sugar and cardamom powder.
2.Mix well and after the sugar gets dissolved close the cooker and pressure cook for 2 whistles in high flame and for another two whistles in medium flame.
3.Once the pressure seizes, check if the ada is soft and cooked, then add cashews and raisins fried in ghee.
4.If the ada is not cooked well or the consistency is thin, keep in medium flame and cook stirring continously.
5.The payasam will be thick and creamy. Serve warm or chilled.
- The ada can be cooked in coconut milk for rich taste.
- Milkmaid can be added instead of sugar.
- If using jaggery, add it finally after the ada gets cooked.
