I was searching for a simple yet delicious recipes to try for pongal and I came across kalkandu pongal in many sites. I guessed it would be like chakkara pongal prepared adding banana that I use to make at home whenever we feel like having sweets. But I had only panakarkandu ( Palm sugar candy) so thought of trying the recipe adding that without grinding to powder. Palm sugar is nutrient rich and has number of minerals, vitamins, calcium and iron. Hence, resulted in healthy, creamy, milky pongal.
- Rice – 1/2 cup
- Moong dal – 2 tsp
- Panakarkandu – 4 tsp
- Milk – 1 and 1/2 cup
- Ghee – 2 tsp
- Cardamom – pinch
- Raisins – 6
1.Wash rice and dal well. Pressure cook both adding required water for 4 whistles.
2.After the pressure seizes, mash both together with spoon.
3.Heat milk in a vessel and when it starts to bubble, add panakarkandu and mix well.
4.When it gets dissolved, add mashed rice and dal. Stir well and cook in medium flame for few minutes until it thickens.
5.Add cardamom powder and raisins fried in ghee. Stir well and switch off flame.
- Adding Moong dal is optional, you can skip it if you want to rich milk taste.
- Panakarkandu has to be added to milk before it comes to boil, to prevent curdling of milk.
