Paruppu dosai, as the name specifies it is made from variety of lentils and rich in protein and iron. This is a quick dosai recipe that do not need fermentation of batter. The only time required is for soaking the rice and lentils. This dosa does not need any side dish or chutney and can be had as such. I can have this dosa even daily and like it so much.
- Channa dal – 1/2 cup
- Masoor dal – 1/2 cup
- Urad dal – 1/4 cup
- Rice – 1/2 cup
- Red chilli – 3
- Small onion – 6
- Cumin seeds – 1 tsp
- Pepper seeds – 1/2 tsp
- Curry leaves – 7
- Corainder leaves – 1 tsp
- Salt – to taste
- Ghee / oil – as required
1.Wash and soak rice and lentils together for about 2-3 hours.
2.Drain the water and grind it together into a coarse batter in a mixer.
3.Heat oil in a kadai and add jeera, pepper, onions and curry leaves. Saute for few minutes.
4.Add this to the grinded mixture and give a spin until everything is mixed together.
5.Using a ladle mix the batter well. Adjust the consistency with water and add salt.
6.Heat dosa pan. Pour the batter and spread it in circular motion. Drizzle a tsp of ghee.
7.Cook on both sides till it turns golden brown. Now, the pauppu dosai is ready to be served hot.
- Grated coconut can be added to enhance the taste.
- Brown rice can be used to make it healthier.
- A piece of ginger and mint leaves can be added while grinding.
- No salt for babies below one year and spices can be adjusted accordingly.
