PEANUT SUNDAL RECIPE | VERKADALAI SUNDAL

Peanut sundal recipe with step-wise pictures and video recipe. Peanut sundal is a simple, easy and healthy evening snack and festival recipe. This sundal is usually prepared for navratri and vinayagar chaturthi festivals. It is protein packed and nutritious.

Cooking time : 5 minutes

No. Of serving : 3

INGREDIENTS:

  • Peanuts – 1 cup
  • Grated coconut – 3 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Urad dal – 1 tsp
  • Curry leaves – 1 sprig
  • Dry red chilli – 3
  • Asafoetida – pinch
  • Salt – as required
  • Oil – 1 tsp

METHOD:

1. Soak the peanuts in water for at-least 3 hours. Once done, add the soaked peanuts to pressure cooker and add one cup of water to it.

2. Add little salt and pressure cook for 3-4 whistles. If using raw peanuts then no need to soak.

3. After the pressure releases, drain excess water and keep aside the cooked peanuts.

4. Heat a pan with oil, add mustard seeds, Cumin seeds and Urad dal to it.

5. Once it splutters, add asafoetida, curry leaves and broken dry red chilli. Give a stir and add cooked peanuts.

6. Saute for a minute and switch off the flame. Check for salt, add grated coconut and mix well.

7. The peanut sundal is ready.
