POTATO BONDA | ALOO BONDA RECIPE

Aloo bonda or potato bonda is a south Indian tea time snack. It is found in almost all the tea shops in my place in evening. The stuffing with potato is prepared, coated with batter and deep fried in oil. I wanted to prepare this bonda for long time. I have some potato stuffing left over after preparing masala bun, So I have prepared this aloo bonda with that stuffing.

INGREDIENTS:

  • Oil – for deep frying

FOR BATTER:

  • Besan flour – 1/2 cup
  • Corn flour – 3 tbsp
  • Red chilli powder – 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Asafoetida – pinch
  • Cooking soda – generous pinch
  • Salt – as required

FOR STUFFING:

  • Potatoes – 2
  • Green peas – 1/2 cup (optional)
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1/2 tsp
  • Salt – as required
  • Asafoetida – pinch
  • Sambar powder – 2 tsp
  • Coriander powder – 1 tsp
  • Chilli powder – 1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Oil – 2 tsp

METHOD:

1. Heat oil in a pan, add mustard seeds and cumin seeds. Once it splutters add green peas and saute well.

2. Add the potato to it and add little water along with required salt. Cook in medium flame.

3. Add turmeric powder, chilli powder, Asafoetida, sambar powder and coriander powder to it. Stir well and cook.

4. Keep mashing the pieces with ladle and cook until water evaporates and combined.

5. The stuffing is ready. Remove from flame and allow it to cool, make small balls from it and keep aside. Heat oil in a kadai for frying bonda.

6. For making batter, take all the ingredients mentioned under “for batter” and mix well adding little water.

7. The batter has to be thick enough to coat the potato balls. Dip the prepared potato balls into the batter and drop into oil.

8. Fry in medium flame until it turns golden on all sides. Remove from oil and drain excess oil in kitchen tissues.

9. The potato bonda is ready. Serve hot with chutney or ketchup.
