QUICK TOMATO RASAM

This tomato rasam is very simple and quick recipe that can be prepared when you are sick. This can be had when you have fever or cold. I was lazy preparing food at home so quickly prepared this rasam with rice and quick brinjal curry.

INGREDIENTS:

  • Tomato – 1
  • Pepper seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Fenugreek seeds – 1 tsp
  • Tamarind – small lemon size
  • Turmeric powder – 1 /3 tsp
  • Coriander powder – 1 tsp
  • Chilli powder – 1 /2 tsp
  • Asafoetida powder – 1 /2 tsp
  • Curry leaves – 4
  • Mustard seeds – 1 /2 tsp
  • Salt – as required
  • Oil – 1 tsp

METHOD:

1.Soak tamarind in water and extract the juice. Cut tomato into pieces and add to a mixer.

2.Add pepper, cumin and fenugreek seeds to the tomatoes and grind into fine paste.

3.Now add this paste to tamarind juice along with asafoetida, turmeric, chilli and coriander powders and mix well.

4.Heat oil in a pan, add mustard seeds and curry leaves. When they splutter add the tomato extract to it.

5.Mix and once the  froth starts forming at top remove from flame.

6.Garnish with coriander leaves and serve hot.
