Sakkarvalli kilangu is my most favourite potato and I like to eat it simply by boiling. I use to give sweet potato often to my baby as finger food, making cutlets or halwa. This time tried simple fry with sweet potato and it became very big hit at home. This will not be very sweet but little sweet and spicy. This fry became our favourite side dish from now 🙂 :-).
- Sweet potato – 3
- Onion – 1
- Ginger garlic paste – 1 tsp
- Turmeric powder – 1/3 tsp
- Chilli powder – 1 /2 tsp
- Sambar powder – 1 tsp
- Mustard seeds – 1 /2 tsp
- Cumin seeds – 1 /2 tsp
- Curry leaves – 6
- Salt – as required
- Oil – 3 tsp
1.Wash well and pressure cook sweet potato with required water until it becomes soft.
2.Peel the skin of sweet potato, trim the edges and cut into small pieces.
3.Heat oil in a kadai, add mustard and cumin seeds. When they splutter add onion and curry leaves. Saute until onion becomes translucent.
4.Add ginger garlic paste and saute until the raw smell goes. Then add chopped sweet potato along with salt, turmeric, chilli and sambar powders.
5.Mix well and sprinkle little water. Roast well in low flame for few minutes.
6.The tasty sweet potato roast is ready to be served with rice and sambar.
- The potato may be sticky, add little extra pull while roasting.
- If you add salt when boiling sweet potato then adjust it while preparing fry.
