SNAKE GOURD STIR FRY | PUDALANGAI PORIYAL

Snake gourd (pudalangai) is well known for its cooling effect in body due to its water content and also helps in weight loss. This wonder vegetable also helps to improve digestive process in our body and provides very good hydration. This poriyal is very simple and can be prepared within minutes. I made this along with bottle gourd puli kulambu for lunch.

INGREDIENTS:

  • Snake gourd – 1
  • Onion – 1
  • Mustard seeds – 1 /4 tsp
  • Turmeric powder – 1 /4 tsp
  • Chilli powder – 1 /2 tsp
  • Urad dal – 1 /2 tsp
  • Chana dal – 1 /2 tsp
  • Oil – 1 tsp
  • Salt – to taste

METHOD:

1.Wash and cut the snake gourd into pieces removing seeds and white strands with hands.

2.In a kadai, heat oil and add mustard seeds. When they splutter add chopped Onions.

3.When they become translucent, add snake gourd and stir well.

4.Add turmeric and chilli powder. Saute for a minute and add little water.

5.Then add salt and cook covered in medium flame until it gets cooked.

6.Serve as a side dish to any rice and gravy.

NOTE :

  • Grated coconut can be added at the end and mixed well.
  • Onions can be omitted and red chilli can be added instead of chilli powder.
