SPROUTED GRAINS CURRY

This simple nutritious protein packed curry can be served with rice or chapathi. I have prepared it with sprouted green gram, chickpeas, horse gram, yard long beans and peanuts. Any legume can be used. The protein content, fiber content and vitamin content increases drastically when a grain sprouts. This can be made as khicidi and given to babies. I have posted the mixed sprouts khicidi in baby foods section.

INGREDIENTS:

  • Sprouted grains – 1 cup
  • Onions(big)  – 1
  • Onions (small) – 4
  • Garlic – 5 cloves
  • Tomato – 2
  • Tumeric powder – 1/4 tsp
  • Sambar powder – 1 tsp
  • Chilli powder – 1/2 tsp
  • Tamarind – lemon size
  • Coconut – 2 tsp
  • Cumin seeds – 1/2 tsp
  • Pepper seeds – 1 /2 tsp
  • Mustard seeds – 1/2 tsp
  • Oil – 1 tsp

METHOD:


1.Heat oil in a kadai, add small Onions, tomato and garlic. Saute for a minute.

2.Transfer to mixer, add cumin seeds, tamarind and coconut.

3.Grind everything together adding little water.

4.Add little oil to the same kadai, add mustard seeds when they splutter add chopped onion.

5.When it changes colour add tomato and saute for few minutes.

6.Add turmeric and sambar powder to it. Saute till raw smell vanishes.

7.Add sprouted grains and grinded powder.

8.Stir well and add required water and salt.

9.Cook covered for 10-15 minutes until the grains gets cooked.

10.When the curry becomes thick garnish with coriander leaves and serve hot.

SPROUTING GRAINS:

  • Soak green gram, chickpeas, horse gram, yard long beans and peanuts in water overnight.
  • Drain the water and keep them in sprout maker/ keep them covered in a pan for 7-8 hrs to get sprouted grains.
