The sweet potato halwa is one of the healthy dessert. Sweet Potato is rich in vitamin A, E , Calcium and beta carotene. My grandma use to make this during Pooja celebrations at home. I have slightly modified this recipe without sugar to make it healthier. This can be given to babies from 8 months after introducing sweet potato. The flavour is delicate and unique.
- Sweet potato – 1
- Dates chopped – 1/2 cup
- Nuts chopped – 3 tsp
- Butter(unsalted) – 2 tsp
- Coconut milk – 5 tsp
- Saffron strands – 1/2 tsp
- Cinnamon powder – 1/2 tsp
1.Boil the sweet potato by cutting into two halves. After it gets cooked, peel the skin.
2.Mash the cooked sweet potato in a bowl using spoon. Soak saffron in warm water.
3.Heat butter in a pan, add mashed sweet potatoes and stir continuously for about 2 minutes. Take care not to stick to the bottom.
4.Add coconut milk and saffron along with water. Mix well and add dates.
5.Cook for few minutes till the dates becomes soft and stir mashing it.
6.Add chopped nuts, cinnamon powder and cook until the water dry and it comes to halwa consistency.
7.After it cools the halwa becomes little thick so adjust the consistency accordingly.
8.Garnish with cashews and enjoy this healthy dessert of mild sweetness.
- when serving adults, jaggery can be added for extra sweetness.
- Add chopped nuts of your choice. I have added cashew, almond and pistachios.
