Hi… We always enjoy spongy fluffy cakes how about chewy and gelatinous textured cake. Yes!!! It will be absolutely yummy. Vanilla jam sponge cake is a chewy, spongy, gelatinous cake that is simple to make without oven. I have prepared it as a surprise cake for my hubby birthday and we enjoyed having it. I prefer making cakes without maida (all purpose flour) so I always use ragi,atta or wheat flour. This is my new creation with rice flour and without eggs in cooker. Try this for new year at home and start your year with homemade healthy cake.
- Rice flour – 2 cups
- Wheat flour – 1 cup
- Sugar – 1 cup
- Vannila essence – 2 tsp
- Ghee – 2 tsp
- Oil – 2 tsp
- Baking soda – 1/4 tsp
- Milk – 1/2 cup
- Dates jam – 1/3 cup
- Almond – 6
1.Mix all the ingredients into batter and leave it undisturbed for half an hour.
2.Put salt in cooker at the bottom for about an inch and grease a baking bowl with ghee.
3.Sprinkle little wheat flour and pour the batter into the bowl.
4.Place it into cooker at the top of salt and close the lid of cooker removing gasket and whistle.
5.Cook for about 40 minutes in low flame placing it in small burner of stove.
6.Switch off flame and let it come to room temperature.
7.Insert toothpick to ensure proper cooking. Remove the bowl from cooker and invert the cake to a plate.
8.Turn the cake and spread the jam evenly at the top of cake with spoon.
9.Then add a layer with finely chopped nuts or arrange almonds above the jam.
- This cake can be had plain or frosted with cream and cherries.
- Any flavour can be added instead of vanilla.
- The quantity of rice and wheat flour can be adjusted accordingly.
- palm sugar or jaggery can be used instead of white sugar.
- Rice flour makes the cake little crisp at top if you don’t like it then ragi flour can be used instead.
