Vetrilai poondu sadam / betel leaves rice recipe with step-wise pictures and video recipe. Vetrilai poondu sadam is a traditional kongunadu special variety rice. It is healthy, flavorful and tasty. Preparing this rice requires grounded masala that adds taste and flavor to it. Betel leaves has many health benefits, it is rich in calcium and aids in digestion. This rice has unique flavors of betel leaves and garlic.

INGREDIENTS:

  • Betel leaves – 5
  • Cooked rice – 2 cups
  • Garlic – 10 pods
  • Oil – 2 tsp
  • Mustard seeds – 1 tsp
  • Channa dal – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Curry leaves – 1 sprig
  • Peanuts – 1/4 cup
  • Cashews – 10
  • Red chilli – 4
  • Salt – as required

FOR MASALA:

  • Cumin seeds – 1 tbsp
  • Fennel seeds – 1 tbsp
  • Pepper seeds – 1 tsp
  • Sesame seeds – 2 tbsp
  • Curry leaves – 1 sprig

METHOD:

1. Wash, cookies rice adding enough water into separate grains and keep aside. You can also use leftover rice for preparing this.

2. To prepare ground masala, dry roast Cumin seeds, Fennel seeds, pepper seeds and sesame until golden.

3. Add curry leaves and roast for a minute. Allow it to cool and grind into coarse powder.

4. Heat a pan with oil, add mustard seeds, channa dal and Urad dal. Once it splutters, add curry leaves, red chillies, peanuts and Cashews.

5. Saute until it turns color. Add crushed garlic and saute until raw smell goes. Tear the betel leaves roughly and add it. Saute until it shrinks.

6. Now add the grounded masala and stir well for a minute. Switch off and add cooked rice along with required salt.

7. Toss and mix well until everything is combined. Check for salt.

8. The tasty and healthy vetrilai poondu sadam ready.
