The carrot dates pancake prepared with wheat bread is a healthy breakfast or snacks option for kids and babies. This sweet soft fluffy pancake is rich in vitamins and minerals as Palm jaggery (panai vellam/karuppatti) is added. I had a pack of wheat bread at home and was thinking what to do with it, as we didn’t like to eat it as such. Initially I thought of making shahi tukra but didn’t do it as baby can’t eat it. So decided of trying a healthy pancake without eggs as Shravanthi is a great fan of pancakes. This pancake can be served with drizzle of honey, peanut butter or jam.
- Wheat bread – 5 slices
- Carrot – 2
- Dates – 6
- Dry fruits powder – 1 tsp
- Wheat flour – 1 tsp
- Palm jaggery (grated) – 1 tsp
- Oil/ghee – as required
1.Grate carrots and dates together and remove the sides of bread.
2.Dip the bread slices in water and squeeze the water, add it to grated carrot and dates. Mix well.
3.Now add dry fruits powder and Wheat flour. Mix everything into a thick batter sprinkling little water.
4.Add grated palm jaggery and stir gently until just combined.
5.Heat a pan and drizzle oil. Drop a spoonful of batter into a pan. Do not spread.
6.Cook covered for two minutes until the sides get cooked.
7.Flip the other side and cook until it turns brown. Repeat with remaining batter.
8.Garnish with dates and the healthy pancake is ready to be served.
- Banana can be added to get soft fluffy pancake.
- Do not overmix the batter as it will make it pancake dense.
