Yellow pumpkin halwa with jaggery recipe with step-wise pictures. Yellow pumpkin halwa is a delicious, healthy festival sweet that can be prepared within minutes for any occasions. This halwa is prepared without adding ghee and I have used coconut oil instead. The flavors of coconut oil adds to the taste making it more like Kerala halwa. Moreover the sweetener I have used is palm jaggery making it healthier. This can also be given to kids and toddlers as evening snacks.

INGREDIENTS:

  • Yellow pumpkin – 2 cups
  • Palm Jaggery – 1 cup
  • Coconut oil – 1/4 cup
  • Cardamom – 3
  • Nuts & raisins – 3 tbsp

METHOD:

1. Wash pumpkin and cut into pieces. You can also remove skin if needed. I have used along with the skin.

2. Take the pumpkin pieces in pressure cooker along with a cup of water. Pressure cook for 3 whistles.

3. Once the pressure releases, open the lid of cooker and mash the pumpkin into smooth puree. You can also puree using hand blender.

4. Heat a pan adding a tbsp of coconut oil/ghee, pour the pumpkin puree and cook in medium flame stirring occasionally until thickens.

5. Once it thickens, add the powdered palm jaggery and crushed Cardamom to it. The mixture will loosen again as jaggery melts.

6. Stir well and cook in low flame adding coconut oil little by little until the mixture comes together leaving sides of the pan.

7. Once done, add fried nuts and raisins to it and mix. Serve warm and enjoy.
