BENDAKAYA PULUSU RECIPE | ANDHRA STYLE OKRA GRAVY

Bendakaya pulusu recipe with step-wise pictures. Bendakaya pulusu is Andhra style tangy and spicy tamarind based gravy prepared with ladies finger / okra. This authentic gravy is prepared cooking okra in Tamarind curry adding jaggery. This is similar to Tamil Nadu vendakkai puli kulambu but the coconut is not addend to it.

INGREDIENTS:

  • Ladies finger – 250 gms
  • Onion – 1
  • Tomato – 1
  • Red chilli – 4
  • Tamarind – lemon size
  • Curry leaves – 1 sprig
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Fenugreek seeds – 1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Chilli powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Asafoetida – pinch
  • Jaggery – 1/2 tsp
  • Oil – 2 tsp
  • Salt – as required

METHOD:

1. Soak tamarind in water and extract the juice. Chop onion, tomato and ladies finger into 1 inch pieces. Keep aside.

2. Heat a pan with oil, add mustard seeds, Cumin seeds and fenugreek seeds. Allow it to splutter.

3. Add chopped onion and red chilies to it. Saute until translucent. Now add ladies finger pieces and saute well in medium flame until it changes color and becomes non sticky.

4. Add tomato and saute until mushy. Now add Turmeric powder, chilli powder and Coriander powder. Mix together and saute for 2-3 minutes until raw smell goes.

5. Simmer the flame, pour the tamarind juice and add required salt. Mix and bring to boil. Check for salt,add little water if needed and boil until ladies finger gets well cooked.

6. Add jaggery and mix well. Switch off the flame and garnish with Coriander leaves.

7. The tasty Bendakaya pulusu is ready. Serve hot with rice.
